Just a quick update from my previous post about our Earthbox apartment garden.
A couple of months ago, I had described the benefits of the Earthbox system and how simple the setup process was, incorporating organic soils, fertilizers, and plants. By using the included planting map, dolomite, and irrigation trough we quickly were able to organize our garden. Click here for my initial blog post.
I first have to reiterate what a great concept the Earthbox setup is for small, compact apartment gardening. We have a modest balcony shared with one neighbor, but our plants are thriving. We have a cherry tomato plant that is now taller than me. We’ll be purchasing an extension soon for our staking system so that our tomato wall can overtake our railing. (Also a great method for blocking out the other pesky residents.)
We had also planted two bell pepper plants that are supplying what feels like infinite repositories of produce. We picked three full-grown peppers to accompany our dinner last night. Our rations are low this week because of travel and no Amazon Fresh order being made, (Previous Amazon post here) so we were reduced to “pasta night.”
Peppers spice up your run-of-the-mill jarred marinara sauce and add some kick to the flavor. Below are pictures of our first picked peppers being roasted in the oven, peeled, and added to the saucepan. Fresh ingredients right from our Earthbox! Once we get some groceries, I’m thinking a stuffed pepper night is in our future.
